It has been FORETOLD – The French Macaroon is dethroning the Cupcake as the official sweet of that most special of days. It will certainly keep chef’s on their toes, as the macaroon is decidedly more touchy than its antecedents. I’m not going to lie – I used up nearly $50 worth of Almond Meal before I created a single macaroon that either didn’t crack or collapse. It is almost like foods don’t give up their secrets without a fight. Without changing my methods too much, after about 5 batches they miraculously came out – as if the macaroon wanted to get to know me first…
