No sooner than we’ve cleaned up my kitchen from the deluge of Holiday Catering, the Wedding Taste Tests begin…… I shouldnt be surprised, after all, I proposed to my wife on Christmas Eve. I must be honest here, and not to take away from the countless weddings I have catered over the last 15 years  – but WEDDING FOOD IS MORE INTERESTING NOW. Over the years I have noticed less adherence to strict formality and traditional fare. 10 years ago, I was not likely to engage in too much experimentation on my clients behalf – they wanted the classics – and not because they were their favorites – they were simply too scared to deviate. Im here to tell you folks – nowadays THEY ARE ALL FOOD DEVIANTS. If this first taste taste of the year is any indicator, I am going to thoroughly enjoy my work in 2014.  Here is/was their WEDDING TASTE TEST:

Homemade Pretzels with Smoked Gouda/Gruyere Cheese Sauce

Old School Caesar Salad with Soft Baked Lemon Thyme Croutouns

Smoked Beef Brisket with Candied Onions and Brown Butter Cream Sauce

Au Gratin Potatoes

Cinnamon Dulce Carrots

They decided not to change a thing on the menu 🙂
