Middle Eastern Taste Test

An intriguing  young couple contacted me last year to cater their wedding in Yellow Springs at the Beautiful Birch House in Glen Helen Nature Preserve. We have had to overcome some time zone issues, being that they are currently living and working in Cambodia !  To add to the intrigue, they requested an authentic Middle Eastern inspired menu. As it turns out, we frequently recommend Middle Eastern (or Medi-Eastern as we often call this clean, simple flavor combinations from the Middle East thru the Mediterranean Sea, all the way to Turkey, Greece, Spain and even Italy). For starters we are serving Chef Marshall Bartley’s Modern Hummus, which exploits the toasted sesame of tahini with Sesame Oil and Cilantro. We also favor fresh felafel with fresh ground Fava Beans and Garbanzos. For the meat: Beef Schwarma of Thinly Sliced Flat Iron Steak Marinated in Onion, Cinnamon and Cardamon among other things, slow roasted until it is spoon tender.  To accompany the meal, Fresh Griddled Flatbread and Fatoosh (Minty Tomatoes, Cucumbers, etc…)
